Strada size question

I plan to buy a strada, and I am wondering about size.  I am currently 205lbs, and ski 34.2mph and run 32 easily, 35 occasionally.   Should I stick with the factory recommendation of 68" based on my weight?  I want to try to get down to 195 by next spring and would 67" be better?  What difference will I notice between the two sizes?  any benefits to going smaller or bigger?  FYI, I ski in MN water with temp ranges from low 60's in  early May to upper 70's and low 80's in late July.
