Need ski recommendations

I am a 48 year old intermediate to advanced recreational skier.  I’ve been skiing for almost 40 years but not much over the last 10 years.  I rarely, if ever, ski a course anymore but want to start skiing again.  Historically, I skied on a 67” Jobe Professional (I know, 25 years old!).  I'm looking for recommendations for a fun but stable ride.  I am 5’9” and 170 lbs.  Also, what bindings should I consider?  I’ve had 2 knee surgeries (cartilage and ACL reconstruction) and while I don’t want to come out too easily, I also don’t relish the idea of a hard fall with no release.  I usually ski around 30-32 MPH with a full length rope.

Radar Senate or Senate C with the Radar Vector Boots.  This ski rips for what you are riding.
